This is a very cool collaboration with Hata Shuzo, another top brewer in the area. The Tamasakae rice is purchased together, polished together, and then each brewer gets to work with it, giving it their own unique touch. The sake isn't released immediately but is allowed to age for several years at the brewery. A round, refined sake with a wonderful story.
