Authentic bodaimoto sake is essentially about freshness and creaminess with a good dose of umami. Often, however, the umami dominates, giving the sake a heavier feel than necessary (unfortunately the case with the bodaimoto sake from Shoryakuji Temple, among others). None of that with this bodaimoto from Kuramoto. We consciously choose the nama variant to really put the freshness in the spotlight; the ideal sake for a summer day.
