Fukunishiki plays a key role in the trend to rediscover old sake rice varieties. These were often forgotten because they were difficult to grow, difficult to brew, or simply no longer in demand as other varieties became more fashionable (looking at you, Omachi!). Tankan Wataribune is an umami-rich variety so don't expect tons of fruitiness here. The sake is produced using the Kimoto method in a large wooden barrel instead of the traditional kettles, which results in a rich yet rounded sake, ideal for winter dishes.
