As Time Goes By originated as a collaboration between two breweries: Yasui Shuzo and Hata Shuzo. The Tamasakae rice is purchased together, polished together, and then each brewer works with it individually to give it their own unique touch. The sake isn't released immediately but is allowed to age for several years at the brewery. A round, refined sake with a beautiful story. We couldn't choose, so we've included the unpasteurized (nama) versions from both brewers in our range. A perfect opportunity to discover how a brewer makes all the difference!
