A very interesting sake! This sake was originally brewed by the Koshinohana Brewery in Northern Japan. The brewery unfortunately closed in 2020, but at the behest of importers, they donated the recipe for Kawasemi, Koshinohana's most successful sake, to the Asahara Brewery. A very expressive, broad-bodied sake, layered, and a perfect match for more complex dishes.
