X3 refers to the amount of koji used in production, more than three times the usual amount. This technique gives the sake extra punch, a bit more intensity. The brewery chooses to hold back and age the sake a little longer to develop more complexity. The mouthfeel is therefore soft, without losing any of its underlying strength. A sake for more powerful dishes, and (inside secret!) a match made in heaven with blue cheese.
