This sake continues in the same vein as the 'entry-level' X3, also brewed with three times more koji than usual. Menkoina is a rare red rice variety, Some of the rice is not polished because the red color is mainly on the outside and will thus influence the final colour of the sake. The result is an elegant, light pink sake with a rich umami character (not surprising with the intensive use of koji) but also a lovely freshness in the aftertaste.
