While Kyoto is known for its refined and often understated sake, a region on the northern edge of the prefecture tells a very different story. In Kyotango, near the iconic Amanohashidate viewpoint, lies Shirasugi Shuzo, the brewery behind the Shirakiku brand. Here, sake is brewed that consciously distinguishes itself from the classic style typically associated with Kyoto.
The brewery was founded in 1777 and is now run by the eleventh generation, Satoru Shirasugi. Instead of using specialized sake rice, Shirakiku chooses to use table rice from the region, such as Koshihikari and Sasanishiki. This choice is not only practical but also philosophical: it's a way to support local agriculture and produce sake rooted in the environment.
What makes Shirakiku special is its experimental approach. They actively experiment with different types of koji and yeast, including varieties that produce malic acid or those derived from black rice.
