Nakaragawa
The Nagaragawa brewery, located in the heart of Gifu, just a stone's throw from Hayashi Honten, with whom we have long collaborated, is among those sake breweries that combine tradition and terroir with exceptional care. Since its founding in 1894, the brewery has worked with the pure water of the Nagara River, a source known for its softness and stability, ideal for brewing elegant, refined sake. Their rice selection is also an essential part of their identity: local varieties such as Hida Homare are polished and processed with precision, allowing the natural umami and aromatic clarity to come fully into their own.
Nagaragawa is known for a style that is both classic and surprisingly fresh. Their sake is characterized by a subtle balance between purity, structure, and a soft, mineral undertone that reflects its regional character. The brewers place great importance on a controlled, artisanal fermentation process, in which attention to detail and respect for the ingredients are central. To the best of our knowledge, it is one of the only breweries where classical music accompanies the fermentation of the sake. We are naturally skeptical by nature, but as long as the sake is good, we are happy to go along with the story! We are not starting our collaboration with a sake, but with one of the most interesting yuzu liqueurs we have ever tasted.
