Asahara
Founded in 1882 by the then 29-year-old Zenjiro Asahara, Asahara Shuzo is a family-owned sake brewery that has been producing sake for five generations in Moroyama, a rural town in Saitama Prefecture. The brewery is situated on the edge of the Chichibu Mountains, overlooking the Kanto Plain—a location that offers access to pure mountain water and carefully cultivated rice.
Historically, Saitama wasn't known as a sake region. It's precisely this relative obscurity that has encouraged local breweries to distinguish themselves through quality and character. In a market where regions like Hyogo and Niigata set the tone, it takes courage and craftsmanship for smaller players to stand out.
Under the leadership of the current generation—with a young and energetic toji at the helm—Asahara Shuzo has developed a distinctive style: elegant, fresh, and accessible. The brewery uses various rice varieties, including Yamada Nishiki, and produces, in addition to sake, fruit liqueurs, wine, and shochu. The emphasis is on artisanal production and the use of local ingredients, with respect for tradition and room for innovation.
Asahara Shuzo is an example of how a brewery outside the established sake regions can carve out a niche for itself — by focusing on terroir, precision, and a personal approach to the craft.
